Ingredients
- 4 fillets white fish fillets
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 onion
- 1 lemon
- 3 tbsp olive oil
- 2 cups cooked rice

Preheat the oven to 400°F. Place the 4 fish fillets in a lightly oiled baking dish and season with salt and pepper.

Chop the 1 red bell pepper, 1 yellow bell pepper, 1 zucchini, and 1 onion into small dice. Toss with 2 tbsp olive oil and a pinch of salt.

Scatter the vegetable mixture over and around the fish. Bake until the fish is opaque and flakes easily with a fork, about 15-20 minutes.

While the fish bakes, warm the 2 cups cooked rice in a microwave or saucepan.

Remove the baking dish from the oven. Squeeze the juice of 1 lemon over the fish and vegetables, then drizzle with the remaining 1 tbsp olive oil.

Serve the fish and vegetable salsa over the warm rice, with extra lemon wedges if desired.
