Ingredients

  • 4 filets white fish fillets
  • 1 can (14.5 oz) canned diced tomatoes
  • 2 tbsp capers
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 cup white rice
  • 8 oz green beans
  • 1 tbsp butter

Instructions

    Preheat oven to 400°F. In a small bowl, mix the 2 tbsp olive oil, 2 minced garlic cloves, and 2 tbsp capers. Season with salt and pepper.

    Place the 4 fish fillets in a baking dish. Pour the tomato mixture over the fish, spreading evenly. Bake until fish flakes easily with a fork, about 15-20 minutes.

    Meanwhile, cook the 1 cup rice according to package instructions, about 15 minutes.

    Steam or boil the 8 oz green beans until tender-crisp, about 5-7 minutes. Drain and toss with the 1 tbsp butter and a pinch of salt.

    Serve the fish with the tomato-caper sauce spooned over, alongside the rice and green beans. Garnish with chopped parsley if desired.
