Ingredients

  • 2 fillet white fish fillets
  • 1 tail lobster tail
  • 1 whole lemon
  • ¼ cup fresh herbs (such as parsley or dill)
  • 2 medium zucchini
  • 2 tablespoon olive oil

    Preheat oven to 400°F. Cut the 2 zucchini into noodles using a spiralizer or julienne peeler, then set aside.

    Zest the 1 lemon and chop the 0.25 cup fresh herbs. Place the 2 fish fillets and 1 lobster tail on a baking sheet lined with parchment.

    Drizzle 1 tablespoon olive oil over the fish and lobster, then sprinkle with the lemon zest, herbs, salt, and pepper.

    Bake for 12-15 minutes, until the fish flakes easily with a fork and the lobster is opaque and firm.

    While baking, heat 1 tablespoon olive oil in a skillet over medium-high. Add the zucchini noodles and cook for 2-3 minutes until just tender. Serve the fish and lobster over the noodles with lemon wedges.
