Ingredients
- 2 cups milk
- 3 large eggs
- ½ cup sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ teaspoon nutmeg

Preheat the oven to 325°F (165°C). Place a kettle of water on to boil for the water bath.

In a medium bowl, whisk the 3 eggs, 0.5 cup sugar, 1 teaspoon vanilla, and 0.25 teaspoon salt until well combined and slightly frothy.

Slowly whisk in the 2 cups milk until the mixture is smooth and the sugar is dissolved.

Pour the custard mixture into a 9-inch pie pan or shallow baking dish. Sprinkle the 0.25 teaspoon nutmeg evenly over the top.

Set the dish in a larger roasting pan. Carefully pour the boiling water into the roasting pan until it reaches halfway up the sides of the custard dish.

Bake for 35-40 minutes, until the custard is set around the edges but still slightly jiggly in the center. The top should be lightly browned.

Remove the custard from the water bath and let it cool on a wire rack for at least 15 minutes before serving. Serve warm or chilled.
