Ingredients

  • 4 slices bacon
  • 8 oz pork
  • 1 medium onion
  • 1 tbsp vegetable oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Cut the 4 bacon slices into 1-inch pieces and slice the 1 medium onion. Heat a large skillet over medium heat and add the bacon pieces. Cook until crispy, about 5-7 minutes, stirring occasionally.

  2. 2

Remove the crispy bacon with a slotted spoon, leaving the rendered fat in the skillet. Add the 1 tbsp vegetable oil and the sliced onion. Cook over medium heat until the onion is soft and golden, about 5 minutes.

  3. 3

While the onion cooks, slice the 8 oz pork into thin strips. Add the pork to the skillet with the onion. Season with the 0.5 tsp salt and 0.25 tsp black pepper. Stir-fry until the pork is browned and cooked through, about 5-7 minutes.

  4. 4

Return the crispy bacon to the skillet and toss everything together for 1 minute until well combined and heated through. Serve hot.
