Bacon and Fig Croissants
Flaky croissants filled with crispy bacon and sweet figs, topped with fresh parsley and served with a side of yogurt, tomato, and strawberries. A delightful breakfast or brunch treat.

Ingredients
- 4 whole croissants
- 8 slices bacon
- 4 whole fresh figs
- 2 tbsp fresh parsley
- 1 cup plain yogurt
- 1 medium tomato
- 1 cup strawberries

Preheat oven to 375°F (190°C). Slice the 4 croissants in half horizontally and place them cut-side up on a baking sheet.

Cook the 8 bacon slices in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels.

Slice the 4 figs into thin rounds. Toast the croissants in the oven for 5-7 minutes until lightly golden and crisp.

Layer the crispy bacon and fig slices on the bottom halves of the croissants. Sprinkle with 1 tbsp of the chopped parsley.

Top with the other croissant halves and return to the oven for 3-4 minutes until warmed through and the figs are soft.

Slice the 1 tomato into wedges and halve the 1 cup strawberries. Serve the croissants with the yogurt, tomato, and strawberries on the side, garnished with the remaining 1 tbsp parsley.
