Ingredients
- 8 oz egg noodles
- 1 lb pork (or chicken), thinly sliced
- 2 cups sauerkraut, drained
- 1 medium onion, sliced
- 1 large carrot, julienned
- 3 stalks green onions, chopped
- 2 tbsp vegetable oil

Cook the 8 oz egg noodles in salted boiling water until al dente, about 7 minutes. Drain and set aside.

Heat 1 tbsp vegetable oil in a large skillet over medium-high. Add the 1 lb pork slices and cook until browned and cooked through, about 5 minutes. Remove and set aside.

In the same skillet, add the remaining 1 tbsp oil, 1 sliced onion, and 1 julienned carrot. Sauté until softened and lightly golden, about 5 minutes.

Add the 2 cups drained sauerkraut and cook, stirring, until heated through and slightly caramelized, about 3 minutes.

Return the pork to the skillet, add the cooked noodles, and toss everything together. Season with salt and pepper to taste.
