Ingredients
- 2 cups cooked sushi rice
- 4 sheets nori sheets
- 1 medium avocado
- 8 pieces tempura shrimp
- 3 tbsp spicy mayo
- 1 tbsp sesame seeds

Place 1 nori sheet on a bamboo mat or clean surface. Wet your hands and spread 1/2 cup sushi rice evenly over the nori, leaving a 1 inch strip at the top edge.

Slice 1/2 avocado into thin strips and lay 2 tempura shrimp across the center of the rice. Drizzle 1 tsp spicy mayo over the filling.

Lift the mat from the bottom and roll tightly over the filling, pressing gently to seal. Moisten the top edge with water to close the roll.

Repeat with remaining ingredients to make 4 rolls. Slice each roll into 6 pieces with a sharp knife, wiping the blade between cuts.

Drizzle the remaining spicy mayo over the rolls and sprinkle with 1 tbsp sesame seeds. Serve with wasabi and pickled ginger if desired.
