Ingredients
- 1.5 lbs beef short ribs (asado de tira), thinly cut
- 1.5 tsp salt
- ¾ tsp black pepper
- 4 cloves garlic cloves, minced
- ¼ cup fresh parsley, chopped
- 1 whole lemon

Pat the beef ribs dry. Season generously on both sides with salt and black pepper.

Heat 2 tbsp olive oil in a 12-inch cast iron skillet over medium-high until it smokes slightly, ~2 minutes.

Sear the ribs in a single layer without moving for 3 minutes until a dark crust forms on the bottom.

Flip and sear another 3 minutes until the second side is deeply browned. Meat should still feel slightly springy.

Push ribs to the side, add minced garlic to the cleared space, cook for 45 seconds until fragrant.

Toss the ribs with the garlic and parsley, then transfer to a cutting board. Squeeze lemon over the top and serve.
