Ingredients

  • 500 g all-purpose flour
  • 7 g instant yeast
  • 10 g salt
  • 350 ml water

Instructions

  1. 1

In a large bowl, whisk together the 500g flour, 7g yeast, and 10g salt. Make a well in the center.

  2. 2

Pour the 350ml water into the well and stir with a wooden spoon until a shaggy dough forms, about 2 minutes.

  3. 3

Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic—it should spring back when poked.

  4. 4

Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot until doubled, about 1 hour.

  5. 5

Punch down the dough, divide into 8 equal pieces, and shape each into a tight ball. Place on a baking sheet lined with parchment.

  6. 6

Cover the rolls loosely with the towel and let rise again for 30 minutes, until puffy. Meanwhile, preheat the oven to 220°C (425°F).

  7. 7

Bake the rolls for 20-25 minutes until deep golden brown and they sound hollow when tapped on the bottom. Cool on a rack.
