Ingredients
- 500 g all-purpose flour
- 7 g instant yeast
- 10 g salt
- 350 ml water

In a large bowl, whisk together the 500g flour, 7g yeast, and 10g salt. Make a well in the center.

Pour the 350ml water into the well and stir with a wooden spoon until a shaggy dough forms, about 2 minutes.

Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic—it should spring back when poked.

Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot until doubled, about 1 hour.

Punch down the dough, divide into 8 equal pieces, and shape each into a tight ball. Place on a baking sheet lined with parchment.
