- 4 tbsp butter
- ½ cup brown sugar
- 1 cup all-purpose flour
- 1.5 tsp baking powder
- ½ cup milk

Preheat oven to 375°F. Melt 2 tbsp butter in a 9-inch cast-iron skillet over medium heat. Stir in 1/2 cup brown sugar and cook until bubbly, about 2 minutes. Remove from heat.

Arrange 4 halved apricots cut-side down over the sugar mixture in the skillet.

In a bowl, whisk 1 cup flour, 1.5 tsp baking powder, and a pinch of salt. Add 2 tbsp softened butter, 1/2 cup milk, and 1/4 cup sugar; stir until just combined (batter will be lumpy).

Pour batter over apricots and spread evenly. Bake until golden and a toothpick comes out clean, 20-25 minutes.
