Ingredients

  • 1 sheet puff pastry sheet
  • 3 medium apples
  • 3 tbsp sugar
  • 2 tbsp butter
  • 1 tsp cinnamon
  • 4 scoops vanilla ice cream
  • 2 tbsp cookie crumbs
  • 4 leaves mint leaves

Instructions

    Preheat oven to 400°F (200°C). Roll out the 1 puff pastry sheet on a floured surface and place on a baking sheet lined with parchment paper.

    Peel and core the 3 apples, then slice thinly. Arrange the slices in overlapping rows on the pastry, leaving a 1-inch border.

    Melt the 2 tbsp butter and brush over the apples. Sprinkle with the 3 tbsp sugar and 1 tsp cinnamon.

    Fold the pastry edges over the apples, pleating as needed. Bake until the crust is golden and the apples are tender, about 25-30 minutes.

    Let the tart cool for 10 minutes, then slice into 4 pieces. Top each with a scoop of vanilla ice cream.
