Ingredients
- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1.5 cups apple
- 1 large egg
- ½ cup milk
- ¼ cup vegetable oil
- ½ cup sugar
Instructions
- 1
Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease with oil.
- 2
In a large bowl, whisk together 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. Set aside.
- 3
In another bowl, beat 1 egg, then stir in 0.5 cup milk, 0.25 cup oil, and 0.5 cup sugar until smooth.
- 4
Pour the wet mixture into the dry ingredients. Stir just until combined—batter should be lumpy, not overmixed.
- 5
Fold in 1.5 cups diced apple (about 1 large apple). Add cinnamon or nutmeg if you have it.
- 6
Divide batter evenly among muffin cups, filling each about 3/4 full.
- 7
Bake until golden and a toothpick inserted in center comes out clean, 18-22 minutes. Cool 5 minutes in pan, then transfer to a rack.
