Ingredients
- 1 loaf baguette
- 8 fillets anchovy fillets in oil
- 2 cups arugula
- ½ cup kalamata olives
- ½ medium red onion
- 3 tbsp olive oil
- 1 medium lemon

Slice the baguette into 1/2-inch thick rounds and brush both sides with 2 tbsp olive oil. Toast in a skillet over medium heat until golden and crisp, about 3 minutes per side.

Thinly slice the red onion and place in a small bowl with the juice of 1 lemon and a pinch of salt. Let sit while you prepare the rest.

Pit and roughly chop the olives. Toss the arugula with the remaining 1 tbsp olive oil and a squeeze of lemon juice.

Top each toast with a few arugula leaves, a piece of anchovy, some chopped olives, and a few onion rings.
