Ingredients
- 1 lb pork shoulder, thinly sliced (or pork carnitas)
- 1.5 cups pineapple, fresh, cut into 1-inch chunks
- ¾ cup guacamole (store-bought or freshly mashed)
- 1 cup pico de gallo (tomato, onion, cilantro, lime)
- 8 pieces warm corn or flour tortillas
- 2 whole lime wedges
- 1 tbsp chili powder or dried guajillo, ground

Season pork slices with chili powder, salt, and pepper on both sides.

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add pork in a single layer and sear 2–3 minutes per side without stirring until edges crisp. Work in batches if needed.

Push pork to the side of the skillet, add pineapple chunks, and sear until caramelized and golden, about 2 minutes.
