Ingredients
- ½ cup butter, softened
- 1.5 cups powdered sugar
- ¼ cup heavy cream
- 8 drops total food coloring (red, yellow, blue, green)
- 8 count store-bought thin pancakes or crepes
- 2 tbsp sprinkles or edible glitter (optional)

Whip softened butter and powdered sugar with an electric mixer until fluffy, about 90 seconds.

Add heavy cream and beat until smooth. Divide buttercream into 4 bowls and tint each a different color with food coloring.

Spread a thin layer of colored buttercream on one pancake. Stack another pancake on top and spread with a different color.

Repeat, alternating colors, until all 8 pancakes are stacked into a tall rainbow tower.

Frost the outside of the stack with remaining buttercream in rainbow stripes if desired, then top with sprinkles.
