Ingredients

  • ½ cup butter, softened
  • 1.5 cups powdered sugar
  • ¼ cup heavy cream
  • 8 drops total food coloring (red, yellow, blue, green)
  • 8 count store-bought thin pancakes or crepes
  • 2 tbsp sprinkles or edible glitter (optional)

Instructions

  1. 1

Whip softened butter and powdered sugar with an electric mixer until fluffy, about 90 seconds.

  2. 2

Add heavy cream and beat until smooth. Divide buttercream into 4 bowls and tint each a different color with food coloring.

  3. 3

Spread a thin layer of colored buttercream on one pancake. Stack another pancake on top and spread with a different color.

  4. 4

Repeat, alternating colors, until all 8 pancakes are stacked into a tall rainbow tower.

  5. 5

Frost the outside of the stack with remaining buttercream in rainbow stripes if desired, then top with sprinkles.

  6. 6

Slice with a sharp knife dipped in hot water between cuts for clean rainbow layers. Serve immediately.
