25-Min Rare Beef Pho
Quick pho broth spiked with fish sauce and star anise, served over rice noodles and paper-thin rare beef that cooks in the hot broth. Bean sprouts and hoisin on the side for dipping.

Ingredients
- 8 cups beef broth
- 2 tbsp fish sauce
- 2 whole star anise
- 8 oz rice noodles (dried, 1/8-inch wide)
- 1 lb beef sirloin or eye of round, thinly sliced
- 2 cups fresh bean sprouts
- ½ cup hoisin sauce

Bring broth to a boil in a large pot with star anise and fish sauce, about 6 minutes.

While broth heats, boil rice noodles in salted water until tender, ~4 minutes. Drain and divide among four bowls.

Remove star anise from broth. Taste and adjust fish sauce or salt.

Arrange sliced beef in a single layer over noodles in each bowl.

Carefully ladle hot broth over beef; the heat will cook the slices rare, ~20 seconds. Serve immediately.

Set out bean sprouts and hoisin sauce on the side for each diner to add to taste.
