Ingredients
- 1 lb boneless, skinless chicken thighs
- ¾ cup jarred mole coloradito paste
- 1.5 cups chicken broth
- 2 tbsp dark chocolate, chopped
- 1 whole lime
- 4 whole corn tortillas
- 2 tbsp sesame seeds
- ¼ whole white onion, thinly sliced
Instructions
- 1
Heat 1 tbsp olive oil in a large skillet over medium-high. Season chicken with salt and pepper, then sear 3 minutes per side until golden—don't move it.
- 2
Whisk mole paste with broth until smooth, then pour over chicken. Add chocolate, reduce heat to medium-low, and simmer 8 minutes until chicken is cooked through.
- 3
Char tortillas directly over a gas flame or in a dry skillet until spotted and crispy, about 90 seconds per side. Break into rough shards.
- 4
Squeeze lime juice into the mole sauce and stir. Taste and adjust salt. Remove from heat.
- 5
Divide chicken and sauce between bowls. Top with sliced onion, crispy tortilla shards, and a scatter of sesame seeds.
