Ingredients

  • 1 lb boneless, skinless chicken thighs
  • ¾ cup jarred mole coloradito paste
  • 1.5 cups chicken broth
  • 2 tbsp dark chocolate, chopped
  • 1 whole lime
  • 4 whole corn tortillas
  • 2 tbsp sesame seeds
  • ¼ whole white onion, thinly sliced

Instructions

    Heat 1 tbsp olive oil in a large skillet over medium-high. Season chicken with salt and pepper, then sear 3 minutes per side until golden—don't move it.

    Whisk mole paste with broth until smooth, then pour over chicken. Add chocolate, reduce heat to medium-low, and simmer 8 minutes until chicken is cooked through.

    Char tortillas directly over a gas flame or in a dry skillet until spotted and crispy, about 90 seconds per side. Break into rough shards.

    Squeeze lime juice into the mole sauce and stir. Taste and adjust salt. Remove from heat.
