Ingredients

  • 2 cups rotisserie chicken, shredded
  • 6 cups chicken broth
  • 3 tbsp garlic and ginger paste (or 2 tbsp minced garlic + 1 tbsp minced ginger)
  • 2 whole star anise
  • 8 oz rice noodles (dried)
  • 1.5 cups fresh bean sprouts
  • 2 cups mixed thai basil, fresh cilantro, lime wedges, thinly sliced chili, sliced onion

Instructions

    Bring broth to a boil in a large pot over medium-high heat, about 4 minutes.

    Stir in garlic-ginger paste and star anise. Simmer 3 minutes until fragrant.

    Add rice noodles and shredded chicken. Cook until noodles are tender, ~4 minutes.

    Taste and season with salt and pepper as needed.

    Divide noodles and broth among bowls. Top with bean sprouts, basil, cilantro, onion, chili, and a lime wedge.
