Ingredients

  • 2 cups rotisserie chicken, shredded
  • ½ pound large shrimp, peeled and deveined
  • ¾ pound fresh egg noodles
  • 6 cups chicken broth
  • 4 whole eggs
  • ½ cup scallions, sliced

Instructions

    Bring broth to a boil in a large pot over high heat, about 3 minutes.

    Add noodles and cook until tender, stirring occasionally, about 4 minutes.

    Stir in shrimp and shredded chicken. Simmer until shrimp turn opaque, 2–3 minutes.

    Gently crack eggs into the simmering broth. They'll poach slightly, 2–3 minutes.

    Season with salt and pepper to taste. Pour soup into bowls.
