Ingredients

  • 1.5 cups rotisserie chicken, shredded
  • 4 cups store-bought chicken pho broth (or chicken broth + 1 tbsp fish sauce)
  • 6 oz rice noodles (dried, thin)
  • ½ medium onion, thinly sliced
  • 1 piece fresh ginger, 3-inch piece, sliced thin
  • 1 cup bean sprouts, fresh
  • 1 set fresh herbs (thai basil, cilantro, or mint) + lime wedges + sliced chili + hoisin sauce

Instructions

    Bring chicken broth to a boil in a large pot over high heat, about 4 minutes.

    Add ginger slices and sliced onion to the broth, simmer 2 minutes until fragrant.

    Stir in rice noodles and shredded chicken, cook 3–4 minutes until noodles soften.

    Taste and adjust with salt, pepper, or a squeeze of lime juice.
