Ingredients

  • 1.5 tbsp neutral cooking oil
  • ½ tsp cumin seeds
  • 1 cup frozen peas and carrots
  • 2 cups cooked basmati rice (about 2 cups)
  • ½ tsp garam masala
  • ½ whole lemon (juiced)

Instructions

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add cumin seeds and toast until fragrant, about 30 seconds. You'll smell the warm spice.

    Add frozen peas and carrots, stir for 2 minutes until they warm through and brighten.

    Add cooked rice and garam masala, breaking up clumps with a spoon. Stir for 2 minutes.

    Squeeze lemon juice over the top and stir once. Taste and season with salt and pepper.
