Ingredients

  • 12 oz small shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 large egg
  • ½ cup cold water
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 3 cups vegetable oil for frying
  • 4 lettuce leaves for serving
  • 2 tbsp spicy mayonnaise (optional)

Instructions

    Pat the shrimp dry using paper towels so the batter will stick properly.

    In a mixing bowl combine flour, cornstarch, salt, black pepper, and garlic powder.

    In another small bowl beat the egg and mix it with the cold water.

    Pour the egg mixture into the flour mixture and stir until a smooth batter forms.

    Heat vegetable oil in a deep saucepan or fryer to about 350°F (175°C).

    Dip each shrimp into the batter, making sure it is fully coated.

    Carefully place the coated shrimp into the hot oil.

    Fry the shrimp for about 2–3 minutes until they become golden brown and crispy.

    Remove the shrimp using a slotted spoon and place them on paper towels to drain excess oil.

    Arrange lettuce leaves on a plate and place the popcorn shrimp on top.
