Watermelon Basil Refresher
Blended fresh watermelon, bright lime juice, and fragrant basil over a big round ice ball — this refresher is the definition of summer in a glass. Light, naturally sweet, and stunning in a coupe. Works as a mocktail or cocktail.

Ingredients
- 3 cups fresh seedless watermelon, cubed
- 1 Juice of 1 large lime (about 2 tablespoons)
- 1 6-8 fresh basil leaves, plus extra for garnish
- 1 tbsp honey, agave, or simple syrup (adjust to sweetness of watermelon)
- 1 Large ice cubes or spheres
- 1 pinch of salt
- 1 Optional for a cocktail version: 1.5 oz vodka or white rum per glass

Blend the watermelon. Add the watermelon chunks to a blender and blend on high until completely smooth, about 30 seconds.

Strain the juice through a fine-mesh sieve into a pitcher to remove pulp. You should have about 1½ cups of clean watermelon juice.

Add lime, basil, and sweetener. Add the lime juice, honey, and basil leaves to the pitcher. Use a wooden spoon to gently muddle the basil against the sides to release its oils. Stir well and taste - add more lime for tartness or honey for sweetness.

Chill in the fridge for at least 10 minutes if time allows.

Serve. Place large ice cubes or a round ice ball in each coupe or lowball glass. Strain the watermelon mixture over the ice.

Garnish with fresh basil leaves and a lime wedge. Serve immediately.
