  • 2 large ripe bananas, mashed until smooth
  • 1.5 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup plant milk (almond, oat, or soy)
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • ¾ cup vegan chocolate frosting

    Preheat your oven to 350°F (175°C). Lightly grease an 8-inch square cake pan or line it with parchment paper so the cake releases easily after baking.

    Peel the bananas and place them in a large mixing bowl. Mash them with a fork until mostly smooth with only small lumps remaining.

    Add the plant milk, vegetable oil, vanilla extract, and apple cider vinegar to the mashed bananas. Stir well until the mixture becomes smooth and evenly combined.

    In a separate bowl combine the flour, cocoa powder, sugar, baking soda, and salt. Whisk the dry ingredients together so the cocoa powder is evenly distributed.

    Slowly pour the dry ingredient mixture into the banana mixture while stirring gently. Mix until a smooth chocolate batter forms. Avoid overmixing, which can make the cake dense.
