Ingredients

  • 1 sheet puff pastry (store-bought or homemade)
  • ½ cup fresh spinach, finely chopped
  • ¼ cup crumbled feta cheese
  • 2 tbsp cream cheese or ricotta
  • 1 tbsp grated parmesan
  • 1 small garlic clove, minced
  • ½ tsp olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 egg (for egg wash)

Instructions

    Place a small pan over medium heat and add the olive oil.

    Add the minced garlic and cook for about 30 seconds until fragrant.

    Add the chopped spinach and cook for 1 to 2 minutes until wilted, then remove from the heat.

    In a bowl, combine the cooked spinach, feta, cream cheese or ricotta, parmesan, salt, and black pepper.

    Stir until the filling becomes creamy and evenly combined.

    Roll out the puff pastry on a lightly floured surface.

    Cut a rectangle slightly larger than the filling portion you want.

    Place the spinach-cheese mixture in the center of the pastry.

    Fold the pastry over the filling or create a small lattice cut on top if desired.

    Beat the egg in a small bowl.

    Brush the egg over the pastry surface.

    Preheat the oven to 400 F (200 C).
