Ingredients

  • 2 cups cooked jasmine rice (preferably day-old rice for best texture)
  • 2 large eggs
  • 1 1½ tablespoons soy sauce
  • 1 tbsp vegetable oil
  • 1 ½ teaspoon sesame oil (optional but recommended)
  • 1 ¼ teaspoon salt
  • 1 ¼ teaspoon black pepper
  • 1 green onion, finely sliced (optional garnish)

    Prepare the Rice: If the rice was cooked earlier and stored in the refrigerator, remove 2 cups of cooked rice and let it sit at room temperature for 5 minutes so it loosens slightly. If the rice is clumped together, gently break it apart with a fork or your fingers so the grains separate. This will help the rice fry evenly.

    Heat the Pan: Place a large frying pan or wok on the stove. Turn the heat to medium-high. Add 1 tablespoon vegetable oil to the pan. Allow the oil to heat for about 30 seconds, until it spreads easily across the pan and looks slightly shiny.

    Cook the Eggs: Crack 2 eggs into a small bowl. Whisk them with a fork until the yolks and whites are fully mixed. Pour the eggs into the hot pan. Let them cook for 10–15 seconds until the edges start to set. Using a spatula, gently stir and scramble the eggs. Continue cooking for 30–40 seconds until the eggs are fully cooked but still soft. Break the eggs into small pieces with the spatula.

    Add the Rice: Add the 2 cups of cooked rice directly into the pan with the eggs. Use the spatula to break up any remaining rice clumps. Stir the rice and eggs together so they mix evenly. Spread the rice out across the pan so it touches the hot surface. Let it cook undisturbed for 30–45 seconds so the rice lightly toasts.

    Add the Soy Sauce: Drizzle 1½ tablespoons soy sauce evenly over the rice. Immediately begin stirring so the soy sauce coats all of the rice grains. Continue cooking and stirring for about 2–3 minutes. The rice should turn a light brown color as the soy sauce mixes in.

    Season the Fried Rice: Add ¼ teaspoon salt and ¼ teaspoon black pepper. Drizzle ½ teaspoon sesame oil over the rice for extra flavor. Stir everything together for another 30–45 seconds.

    Final Cooking: Continue cooking the rice for another 1–2 minutes, stirring occasionally. The rice should be hot, slightly toasted, and evenly coated with soy sauce.
