Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 2 eggs
  • 1 tbsp vegetable oil or sesame oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil (optional)
  • 1 ¼ teaspoon salt
  • 1 ¼ teaspoon black pepper
  • 2 tbsp chopped green onions (optional)
  • 1 tsp toasted sesame seeds (optional)
  • 1 tbsp shredded nori or seaweed flakes for garnish

Instructions

    Start with 2 cups of cooked rice. If the rice is clumped together, gently break it apart with your hands or a fork.

    Heat 1 tablespoon oil in a large skillet or pan over medium-high heat.

    Add the minced garlic and cook for about 30 seconds, just until it becomes fragrant.

    Push the garlic to the side of the pan and crack the eggs directly into the pan.

    Scramble the eggs gently with a spatula until they are mostly cooked but still soft.

    Add the rice to the pan and stir everything together so the eggs and garlic mix evenly with the rice.

    Pour in the soy sauce and stir well, letting the rice cook for 3–4 minutes so it warms through and picks up a light golden color.
