Ingredients
- 1.5 cups all-purpose flour
- ½ cup butter, softened
- ¾ cup apricot jam
- 1 cup walnuts, chopped
- 1 whole egg
- ¼ cup granulated sugar
- ½ tsp vanilla extract

Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.

Mix butter, sugar, and vanilla in a bowl until pale and fluffy, about 2 minutes by hand.

Stir in flour and 0.5 cup walnuts until crumbly. Press half into the pan to form base.

Spread jam evenly over crust. Whisk egg, then mix with remaining 0.5 cup walnuts and sugar.

Dollop walnut mixture over jam and spread gently to cover. Bake until golden, 12–14 minutes.

Cool in pan 5 minutes, then slice into 6 bars. Serve warm or at room temperature.
