Ingredients
- 1.5 lbs beef sirloin or round steak, thin-cut (about 1/4 inch)
- 8 oz mushrooms, finely chopped
- 1 medium onion, finely diced
- 3 tbsp fresh dill or parsley, chopped
- 2 tbsp tomato paste
- 1 cup beef broth
- ½ cup sour cream
- 3 tbsp olive oil
- 1 as needed salt and black pepper to taste

Place beef slices between plastic wrap. Pound with a meat mallet until 1/8 inch thick.

Heat 1 tbsp olive oil in a skillet over medium. Sauté mushrooms and diced onion until golden and dry, ~8 minutes.

Stir in dill. Season filling with salt and pepper. Transfer to a plate.

Lay beef flat. Spoon 2–3 tbsp filling across the center of each slice.

Roll tightly from one short end, folding in the sides. Secure with a toothpick if needed.

Season rolls with salt and pepper. Heat remaining 2 tbsp oil in a large skillet over medium-high.

Sear rolls in batches without moving until browned on two sides, ~3 min per side. Set aside.

Whisk tomato paste into beef broth. Pour over rolls. Cover and simmer 25 minutes.

Stir in sour cream until smooth. Simmer uncovered 5 more minutes. Taste and adjust seasoning.
