Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon instant yeast
  • ½ teaspoon salt
  • 1 cup warm water
  • 2 tablespoons olive oil
  • ¾ cup za'atar spice blend
  • ½ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice

Instructions

    In a large bowl, combine flour, yeast, and salt. Make a well in the center and add warm water and olive oil.

    Mix until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic.

    Let dough rest in an oiled bowl covered with a damp cloth for 1 hour until doubled in size.

    In a small bowl, whisk together za'atar, extra virgin olive oil, and fresh lemon juice until well combined.

    Preheat oven to 450°F. Divide dough into 4 equal portions and roll each into a thin oval about 0.25 inches thick.

    Place on parchment-lined baking sheets. Spread za'atar mixture generously over each manakish, leaving edges bare.

    Bake for 12-15 minutes until golden brown and crispy.
