Ingredients
- 8 pieces chicken thighs, bone-in and skin-on
- 3 tablespoons za'atar spice blend
- 4 tablespoons olive oil
- 1 whole lemon, juiced
- 1 teaspoon salt
- ½ teaspoon pepper

Preheat the oven to 425°F and wait until the indicator light or beep signals it has finished heating, about 10 minutes.

Pat the chicken thighs dry with paper towels by pressing gently on the skin side and underside until no moisture remains.

Place the za'atar, olive oil, lemon juice, salt, and pepper into a small bowl and stir with a spoon until fully combined into a wet paste.

Arrange the chicken thighs skin-side up in a single layer on a sheet pan with no overlapping pieces.

Spread the za'atar mixture evenly over the top and sides of each chicken piece using the back of a spoon, coating thoroughly.

Slide the sheet pan into the oven on the middle rack and roast for 14–16 minutes until the skin is golden brown and a meat thermometer inserted into the thickest part of a thigh reads 165°F.
