Ingredients

  • 8 pieces bone-in, skin-on chicken thighs
  • 3 tablespoons za'atar spice blend
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic cloves, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup tahini sauce
  • ¼ cup fresh parsley, chopped
  • 1 whole lemon wedges

Instructions

    Preheat oven to 425°F (220°C). Pat chicken thighs dry with paper towels to ensure crispy skin.

    In a small bowl, combine za'atar, olive oil, lemon juice, minced garlic, salt, and pepper to form a paste.

    Place chicken thighs skin-side up on a large rimmed baking sheet. Rub the za'atar paste evenly over the skin and under the thighs.

    Roast for 30–35 minutes, until the skin is deeply golden and crispy, and the internal temperature reaches 165°F (74°C) at the thickest part.

    Remove from oven and let rest for 5 minutes before serving.

    Transfer chicken to a serving platter. Drizzle with tahini sauce, sprinkle with fresh parsley, and garnish with lemon wedges.
