Ingredients

  • 2 rounds pita bread
  • ½ cup hummus
  • 4 large eggs
  • 2 medium tomatoes, diced
  • 1.5 tbsp za'atar seasoning
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions

    Warm pita in a skillet over medium heat, about 45 seconds per side until softened.

    Spread hummus generously on each warm pita. Sprinkle 1 tbsp za'atar over the hummus.

    In the same skillet, crack eggs and scramble over medium heat until whites set but yolks still jiggle, about 3 minutes.

    Divide diced tomatoes between the two pitas. Top with scrambled eggs and crumbled feta.

    Garnish with fresh parsley and a final sprinkle of za'atar. Serve immediately while warm.
