Ingredients
- 1 cup jasmine rice
- 1 teaspoon turmeric
- 2 pieces chicken thighs
- 2 tablespoons sambal oelek
- 1 whole lime
- 4 leaves lettuce leaves
Instructions
- 1
Rinse 1 cup jasmine rice until water runs clear. In a small pot, combine rice with 1.5 cups water and 1 teaspoon turmeric. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 15 minutes.

While rice cooks, season 2 chicken thighs with salt and pepper. Heat 1 tablespoon oil in a skillet over medium-high. Cook chicken until golden brown and cooked through, about 6 minutes per side. Let rest for 2 minutes, then slice.

Fluff the cooked rice with a fork. Divide rice between two plates, top with sliced chicken, 4 lettuce leaves, and a dollop of 2 tablespoons sambal oelek. Serve with lime wedges for squeezing over everything.
