Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 tbsp yellow curry paste
  • 1 can (13.5 oz) coconut milk, full-fat
  • 1 whole lime (juiced)
  • 1 tbsp fish sauce
  • 1.5 cups bell pepper or snap peas

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering, ~60 seconds.

    Add curry paste and stir for 30 seconds until fragrant, then pour in coconut milk and stir to combine.

    Add shrimp and bell pepper. Simmer for 4–5 minutes, stirring occasionally, until shrimp are pink and cooked through.

    Remove from heat. Stir in lime juice and fish sauce, adjusting salt and spice to taste.
