Ingredients

  • 8 pieces chicken thighs, bone-in, skin-on
  • 3 large yellow onions
  • ¼ cup Dijon mustard
  • 3 whole (juiced + zested) fresh limes
  • 2 whole habanero or serrano peppers
  • 3 tbsp olive oil
  • ½ cup chicken broth
  • 2 whole bay leaf

Instructions

    Pat chicken dry with paper towels. Slice onions into 1/4-inch thick rings. Juice and zest limes. Slice peppers into thin rings, keeping seeds intact.

    Heat olive oil in a 14-inch skillet over medium-high until shimmering. Season chicken generously with salt and pepper.

    Sear chicken skin-side down 4 minutes without moving until skin darkens. Flip and sear other side 3 minutes. Remove to a plate.

    Add onions and peppers to the same skillet, stir, and cook 4 minutes until onions begin to soften and char at the edges.

    Stir in mustard, lime juice and zest, broth, bay leaves, and 0.5 tsp salt. Return chicken skin-side up. Simmer 8 minutes until chicken reaches 165°F.

    Serve chicken topped with caramelized onions and peppers. Spoon sauce over everything.
