Ingredients
- 12 oz yam, peeled and cubed into 1/2-inch pieces
- 8 oz shrimp, peeled and deveined
- 6 oz ground pork
- 1 whole lime (juiced + zested)
- 1.5 tbsp fish sauce
- 2 tbsp Thai red chili paste or sambal oelek
- ½ cup fresh cilantro and scallions, chopped (divided)

Heat 2 tbsp oil in a large skillet over medium-high. Add yam cubes and cook 8 minutes, stirring occasionally, until edges brown and centers soften.

Push yams to the side. Add ground pork to the empty space and cook 4 minutes, breaking up with a spoon, until no pink remains.

Add shrimp, lime zest, fish sauce, and chili paste. Toss constantly for 3 minutes until shrimp turn opaque and everything is coated.

Remove from heat. Squeeze lime juice over the top and fold in half the cilantro and scallions.

Divide between bowls or plates. Garnish with remaining herbs and serve hot.
