Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 4 cups napa cabbage, thinly sliced

Instructions

    Whisk soy sauce, mirin, rice vinegar, and minced garlic in a small bowl until combined.

    Cut chicken thighs into bite-sized pieces, about 1.5 inches. Pat dry with a paper towel.

    Toss chicken with half the sauce. Arrange on a foil-lined broiler pan in a single layer.

    Broil 4 inches from heat for 6 minutes, until edges char and chicken cooks through.

    Toss cabbage with remaining sauce and divide between two plates.
