Wonton Soup with Noodles

Ingredients

  • 12 pieces frozen wontons
  • 4 ounces dried egg noodles
  • 2 heads baby bok choy
  • 2 tablespoons low-sodium soy sauce
  • 1 large eggs
  • 1 tablespoon vegetable oil

Instructions

    Bring a large pot of water to a boil. Add the 4 oz dried egg noodles and cook until tender, about 4-5 minutes. Drain and set aside.

    In the same pot, bring 4 cups of water to a boil. Add the 12 frozen wontons and cook until they float and are cooked through, about 5-6 minutes.

    Add the 2 heads baby bok choy and 2 tbsp soy sauce to the pot. Simmer until the bok choy is bright green and tender, about 2 minutes.

    While the soup simmers, heat 1 tbsp vegetable oil in a small skillet over medium-high. Crack the 1 egg into the pan and fry until the white is set and the yolk is still runny, about 2-3 minutes.

    Divide the noodles between two bowls. Ladle the wontons, bok choy, and broth over the noodles. Top each bowl with the fried egg and serve hot.
