Ingredients
- 1.5 lbs chicken thighs, boneless and skinless
- 1 medium onion, diced
- 3 cloves garlic, minced
- 14 oz canned diced tomatoes
- ½ cup natural peanut butter
- 1.5 cups chicken broth
- 1 tbsp ginger, fresh, grated
Instructions

Cut chicken into 1.5-inch chunks. Pat dry with a paper towel.

Heat 2 tbsp oil in a large pot over medium-high until shimmering.

Add chicken and cook without stirring until golden on one side, ~4 minutes.

Stir and cook until all sides are opaque, ~4 minutes more. Remove to a plate.

Add onion to the pot and sauté until softened and translucent, ~5 minutes.

Stir in garlic and ginger. Cook until fragrant, ~60 seconds.

Add canned tomatoes with juice, chicken broth, and peanut butter.

Whisk until peanut butter dissolves and the sauce is smooth.

Return chicken to pot. Bring to a simmer and cover.

Simmer uncovered for 15 minutes, stirring occasionally, until chicken is tender.
