- ¾ lb beef sirloin or ribeye, thinly sliced
- 3 tbsp fish sauce
- 3 tbsp fresh lime juice
- 2 whole Thai red chiles, minced (or 1 tsp chili flakes)
- 6 whole garlic cloves, minced
- ½ cup fresh cilantro and mint, chopped

Whisk fish sauce, lime juice, and minced chiles together in a small bowl. Set the sauce aside.

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Sear the beef in a single layer without stirring for 90 seconds until edges turn golden. Flip and sear the other side 60 seconds. Transfer to a plate.

Add minced garlic to the same skillet and cook, stirring constantly, for 30–45 seconds until fragrant—don't let it brown.
