Ingredients

  • ¾ lb beef sirloin or ribeye, thinly sliced
  • 3 tbsp fish sauce
  • 3 tbsp fresh lime juice
  • 2 whole Thai red chiles, minced (or 1 tsp chili flakes)
  • 6 whole garlic cloves, minced
  • ½ cup fresh cilantro and mint, chopped

Instructions

    Whisk fish sauce, lime juice, and minced chiles together in a small bowl. Set the sauce aside.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear the beef in a single layer without stirring for 90 seconds until edges turn golden. Flip and sear the other side 60 seconds. Transfer to a plate.

    Add minced garlic to the same skillet and cook, stirring constantly, for 30–45 seconds until fragrant—don't let it brown.

    Pour the fish sauce mixture into the pan and stir for 15 seconds to warm through. Return beef to the skillet with any juices.

    Toss everything together gently, then slide onto a serving plate. Scatter cilantro and mint over the top. Serve hot.
