Ingredients
- ½ lb beef sirloin, thinly sliced
- 2 tbsp soy sauce
- 6 whole dried red chilies
- 2 stalks green onions, chopped
- 2 tbsp vegetable oil
- 2 cups water

In a bowl, toss the 0.5 lb beef slices with 1 tbsp soy sauce. Let sit while you prepare the other ingredients.

Heat 2 tbsp vegetable oil in a pot over medium-high. Add 6 dried chilies and stir until fragrant, about 30 seconds.

Pour in 2 cups water and the remaining 1 tbsp soy sauce. Bring to a boil, then reduce to a simmer.

Add the beef slices one by one, stirring gently. Cook until just pink no longer, about 2-3 minutes.
