Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp cold butter, cubed
  • 3 tbsp granulated sugar
  • ¾ cup whole milk
  • ½ cup clotted cream
  • ½ cup strawberry jam

Instructions

  1. 1

Preheat oven to 400°F. Mix flour, sugar, and 1 tsp salt in a large bowl.

  2. 2

Rub cold butter into the flour with your fingertips until the mixture looks like coarse breadcrumbs, about 2 minutes.

  3. 3

Pour milk into the flour mixture and stir with a fork until a shaggy dough forms—do not overwork it.

  4. 4

Turn dough onto a floured surface and gently pat into a 1-inch-thick round. Cut into 8 wedges or use a biscuit cutter for rounds.

  5. 5

Arrange scones on a sheet pan and bake for 12–14 minutes until golden brown on top and a toothpick comes out clean.

  6. 6

Serve warm scones topped with a spoonful of clotted cream and strawberry jam.
