Vodka Pasta
A creamy, tomatoey pasta with a hint of vodka and plenty of grated cheese. Ready in about 20 minutes, this is the perfect weeknight comfort meal.

Ingredients
- 8 oz spaghetti
- ¼ cup vodka
- 1.5 cup tomato sauce
- ½ cup heavy cream
- ½ cup parmesan cheese, grated
- 2 tbsp parsley, chopped

Bring a large pot of salted water to a boil. Add the 8 oz spaghetti and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

In a large skillet over medium heat, add the 1/4 cup vodka and 1.5 cups tomato sauce. Simmer until slightly thickened, about 3-4 minutes.

Stir in the 1/2 cup heavy cream and 1/2 cup grated parmesan. Cook, stirring, until the sauce is smooth and creamy, about 2 minutes.

Add the drained spaghetti to the skillet. Toss to coat, adding reserved pasta water a splash at a time if the sauce is too thick.

Serve immediately, topped with the 2 tbsp chopped parsley and extra parmesan if desired.
