Ingredients

  • 10 sheets rice paper wrappers (8-inch rounds)
  • ½ pound cooked shrimp, halved lengthwise
  • ½ pound cooked pork, thinly sliced
  • 1 medium cucumber, cut into thin matchsticks
  • 3 tablespoons peanut butter
  • 1 tablespoon fish sauce

Instructions

    Place a medium bowl filled with warm water on your work surface, next to a clean cutting board. The water will soften the rice paper so you can fold it.

    Cut the cucumber lengthwise into quarters, then slice each quarter into thin matchsticks—about the thickness of a toothpick—so they will be easy to roll inside the wrapper.

    In a small bowl, whisk together 3 tablespoons peanut butter, 1 tablespoon fish sauce, and 2 tablespoons warm water until completely smooth and pourable, about 1 minute of whisking.

    Dip one rice paper sheet into the warm water for 2 seconds—until it just begins to soften but is still slightly stiff—then lay it flat on the cutting board.

    Place 3 shrimp halves (pink side down so it shows on the outside), a small pinch of sliced pork, and a small handful of cucumber matchsticks in a tight horizontal line across the lower third of the wrapper.

    Fold the bottom edge of the wrapper up and over the filling, tucking it snugly, then fold the left and right edges inward to cover the sides of the filling.

    Roll upward tightly, like rolling a burrito, until the roll is completely sealed and the shrimp are visible through the translucent wrapper on the outside.

    Place the finished roll seam-side down on a clean plate, then repeat steps 4 through 7 with the remaining rice paper sheets and fillings.

    Arrange the spring rolls on a serving plate and place the bowl of peanut sauce in the center or on the side for dipping.
