Ingredients

  • 1 lb shrimp, medium, peeled and deveined
  • 1.5 cups pineapple, fresh, cut into 1-inch chunks
  • 4 whole tomatoes, halved
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 5 cups water
  • ½ cup fresh cilantro and scallions, chopped

Instructions

    Bring water to a boil in a large pot over high heat.

    Add pineapple and tomatoes. Simmer 5 minutes until tomatoes soften.

    Stir in fish sauce and lime juice. Taste and adjust seasoning.

    Add shrimp and cook 3–4 minutes until pink and opaque throughout.

    Ladle into bowls and top with cilantro and scallions.
