Ingredients

  • 8 oz rice noodles
  • ½ lb shrimp, peeled and deveined
  • ½ lb pork tenderloin, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 cup fresh herbs (mint, cilantro, basil)
  • 2 whole lime

Instructions

    Cook the 8 oz rice noodles according to package directions until tender, about 5-7 minutes. Drain, rinse with cold water, and set aside.

    Season the 0.5 lb shrimp and 0.5 lb pork with salt and pepper. Heat a large skillet over high heat, add 1 tbsp oil, and cook the pork until browned, about 3 minutes. Add the shrimp and cook until pink and opaque, about 2 minutes more.

    In a small bowl, whisk the juice of 2 limes with 1 tbsp fish sauce and 1 tsp sugar (if you have them) to make a dressing.

    In a large bowl, toss the noodles with the cooked pork and shrimp, 1 sliced red onion, and 1 cup fresh herbs. Drizzle with the dressing and toss again. Serve immediately.
