Ingredients

  • 2 cups rotisserie chicken, shredded
  • 4 cups chicken broth
  • 2 tbsp fresh ginger, sliced thin
  • 3 whole scallions, chopped
  • 1 tbsp fish sauce
  • ½ whole lime (juiced)

Instructions

    Pour broth into a pot and bring to a simmer over medium-high heat.

    Add ginger slices and simmer for 2 minutes until fragrant.

    Stir in rotisserie chicken, fish sauce, and half the scallions.

    Simmer 2 minutes more until chicken is heated through.

    Squeeze lime juice into the pot and taste—adjust fish sauce or salt.
