Ingredients
- 4 large flour tortillas
- 2 cups cooked rice
- 1 can (15 oz) canned black beans
- 2 cups shredded lettuce
- 1 cup salsa
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp salt

Warm the 4 tortillas in a dry skillet over medium heat for 30 seconds per side, until soft and pliable. Stack them on a plate and cover with a clean towel.

Heat the 1 tbsp olive oil in the same skillet over medium heat. Add the drained and rinsed black beans, 1 tsp chili powder, and 0.5 tsp salt. Cook, stirring, until beans are hot and slightly crispy, about 5 minutes.

Warm the 2 cups cooked rice in the microwave for 1-2 minutes, or in a small pot with a splash of water over low heat, until steaming.

Lay a tortilla on a flat surface. Spread about 0.5 cup of warm rice down the center, leaving a 2-inch border at the bottom.

Top the rice with a generous spoonful of the seasoned beans, a handful of shredded lettuce, and a drizzle of salsa.

Fold the bottom of the tortilla over the filling, then fold in the sides and roll tightly to seal. Repeat with the remaining tortillas and filling.
